An Insider’s Tip:

Hit the morning 11am-1pm session for lighter crowds and prime access to Doreen herself—target Mexico's Bichi "La Gorda Yori," China's taoguan-fermented Silver Heights, and Spain's Bodega Cueva pet-nats or vermouths. Pair with veggies or cheese for max versatility; less crowded than afternoon rushes.
